The Devgad Ledger
Our alphonso growers are third-generation names in a ledger our founder opened in 1962; the fruit is ripened slowly in rice straw, never hastened with carbide. Each tray carries the orchard's name and its picking date.
Never the Fridge
Mangoes, sitaphal and stone fruit sulk below ten degrees — let them ripen on the counter until fragrant at the stem. Only then, if you must, allow a brief spell in the crisper before serving.
From the Cheese Room
Shine muscat wants aged comté and very little else; alphonso is best torn over burrata with cracked pepper and a thread of saffron honey. Our cheese room will gladly portion to match whatever fruit you carry home.
